100 gm: Aubergine (egg plant)
1 tsp: Turmeric powder
2 tbsp: Mustard oil
Salt to taste
Method
1. Cut the aubergines lengthwise.
2. Rub in salt and turmeric. Heat the mustard
oil in a frying pan. Add the pieces of aubergine
to it and keep turning the sides to cook evenly
on either side.
